Indulge in the vibrant flavors of our Marinated Vegetable Salad with Italian Dressing—a refreshing side dish that transforms an array of fresh vegetables into an exciting medley. This salad is perfect for picnics, potlucks, or as a meal prep option, allowing each vegetable to soak up the tangy Italian dressing for a deliciously flavorful experience. With just 20 minutes of prep time, you can create a colorful and nutritious salad that’s as delightful to look at as it is to eat. The key here is allowing the salad to marinate overnight, enhancing the flavors and ensuring every bite bursts with freshness.

Ingredients

Scale
  • 1 small head broccoli (cut into bite-size florets)
  • ½ small head cauliflower (cut into bite-size florets)
  • 8 oz cherry tomatoes
  • 1 small red onion (cut into thin rings)
  • 8 oz fresh mushrooms (sliced)
  • 12 baby carrots (diced or substitute 2 large carrots)
  • 1 (8 oz) can water chestnuts (sliced)
  • 1 (4 oz) can pitted black olives (sliced)
  • ¾ cup vegetable oil
  • ⅓ cup red apple vinegar
  • 3 garlic cloves (finely minced)
  • 1½ tablespoons granulated sugar
  • 2 teaspoons Italian seasoning
  • 2 teaspoons soy sauce (as a Worcestershire sauce alternative)
  • 1 teaspoon salt

Instructions

  1. In a large mixing bowl, combine chopped broccoli, cauliflower, cherry tomatoes, red onion rings, sliced mushrooms, diced baby carrots, water chestnuts, and black olives.
  2. In a mason jar, mix vegetable oil, red apple vinegar, minced garlic, granulated sugar, Italian seasoning, soy sauce, and salt. Secure the lid and shake until well combined.
  3. Pour the dressing over the vegetables and toss until evenly coated.
  4. Cover and refrigerate overnight to allow flavors to meld before serving.
