Ingredients
- 225g butter, softened
- 225g light muscovado sugar
- 300g self-raising flour
- 2 tsp baking powder
- 1 tsp ground cinnamon
- 4 large eggs, at room temperature
- 550g Bramley cooking apples
- Juice of ½ lemon
- Icing sugar, for dusting
Instructions
- Preheat your oven to 180°C (160°C Fan). Grease and line a 30cm x 23cm traybake tin.
- Peel, core, and thinly slice the Bramley apples, tossing them in lemon juice to prevent browning.
- In a large mixing bowl, beat together the softened butter and sugar until creamy. Mix in flour, baking powder, half of the cinnamon, eggs, and milk until smooth.
- Spread half of the batter into the prepared tin and layer with half of the apple slices and remaining cinnamon. Spoon over the rest of the batter, topping with remaining apple slices.
- Bake for 40-50 minutes or until a skewer comes out clean from the center.
- Allow to cool for 10 minutes before transferring to a wire rack to cool completely. Dust with icing sugar before serving.
