  • 175g softened butter
  • 175g light brown soft sugar
  • 3 large eggs
  • 175g self-raising flour
  • 2 tsp ground mixed spice
  • 115g mixed dried fruit
  • 2 tbsp apple juice or orange juice
  • 115g icing sugar
  • 12 tbsp warm water
  • Glacé cherries
  • Icing holly leaves

Instructions

  1. Preheat your oven to 180°C (350°F) and grease a 12-hole muffin tray.
  2. Beat the softened butter and light brown sugar until fluffy. Add eggs one at a time, mixing well after each addition.
  3. Fold in self-raising flour and ground mixed spice until just combined.
  4. Gently incorporate mixed dried fruit and apple or orange juice.
  5. Spoon the mixture into muffin holes and bake for 25–30 minutes until golden brown.
  6. Once baked, allow cooling on a wire rack for about 10 minutes before icing with a mixture of icing sugar and warm water. Decorate with glacé cherries and holly leaves.
