Ingredients
- 250g mixed dried fruit
- 250ml hot strong black tea
- 2 tbsp caster sugar
- 175g self-raising flour
- 1 tsp mixed spice
- 1 egg, beaten
Instructions
- Soak the mixed dried fruit in hot black tea and caster sugar overnight in a mixing bowl, covered.
- Preheat the oven to 160°C (fan 140°C).
- Combine soaked fruit mixture with self-raising flour, mixed spice, and beaten egg until well mixed.
- Spoon into a greased loaf tin and bake for 1 to 1¼ hours until a skewer comes out clean.
- Allow cooling completely on a wire rack before slicing.
