  • 1 tablespoon lemon zest

Instructions

  1. In a medium saucepan over medium heat, warm the olive oil. Add diced onion, celery, and salt; sauté until softened (about 4-5 minutes).
  2. Stir in the basmati rice to coat with oil and vegetables. Pour in the vegetable stock and lemon juice; bring to a boil.
  3. Reduce heat to low and cover tightly. Cook for approximately 13-15 minutes until the liquid is absorbed and the rice is tender.
  4. Remove from heat and let sit covered for an additional 5-6 minutes to steam. Fluff with a fork and mix in dill and lemon zest before serving.
