  • 1 can white beans (15 oz), drained and rinsed
  • 1/4 cup kalamata olives, halved
  • 1/3 cup roasted red peppers, chopped
  • 1 small red onion, chopped
  • 1 cup cherry tomatoes, halved
  • 1 green bell pepper, diced
  • 1/2 English cucumber, diced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 lemon, juiced
  • 2 garlic cloves, minced
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the chickpeas, white beans, olives, roasted red peppers, red onion, cherry tomatoes, bell pepper, cucumber.
  2. In a separate jar or bowl, whisk together olive oil, apple cider vinegar, lemon juice, minced garlic until well combined.
  3. Season the salad mixture with salt and pepper to taste; drizzle the dressing over the top.
