  • 1 medium head of cauliflower, cut into small florets
  • 1 ½ cups cherry tomatoes, halved
  • ½ cup red onion, thinly sliced
  • ⅓ cup black olives (Kalamata)
  • ⅓ cup green olives
  • ¼ cup fresh parsley, chopped
  • ¼ cup extra virgin olive oil
  • 3 tablespoons red apple vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional)

Instructions

  1. Blanch cauliflower florets in boiling water for 1-2 minutes until tender-crisp. Transfer to an ice bath immediately.
  2. In a large bowl, combine blanched cauliflower with cherry tomatoes, red onions, olives, and parsley.
  3. In a separate bowl, whisk together olive oil, vinegar, Dijon mustard, minced garlic, oregano, basil, salt, black pepper, and optional red pepper flakes until well blended.
  4. Pour the dressing over the salad mixture and toss to coat evenly.
  5. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
