  • 1 cup crumbled feta cheese
  • 1/2 onion, chopped
  • 1 sheet puff pastry, thawed
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Sauté the chopped onion until translucent (about 5 minutes).
  3. In a mixing bowl, combine the sautéed onion with chopped spinach and crumbled feta cheese; mix well.
  4. Roll out the thawed puff pastry on a floured surface and cut it into squares (approximately 4 inches each).
  5. Place a spoonful of the spinach-feta mixture in the center of each square, fold diagonally to form triangles, and seal edges with a fork.
