  7. Roll and fold: Roll out again to create layers by folding into thirds like a letter; repeat this process two more times.
  8. Shape croissants: Roll out one last time into a large rectangle; cut triangles and roll them from base to tip.
  9. Proof croissants: Place on lined baking sheet; cover loosely with plastic wrap and let proof until doubled in size.
  10. Bake: Preheat oven to 400°F (200°C). Brush with beaten egg before baking for about 20-22 minutes until golden brown.
