Ingredients
- 115 g unsalted butter
- 135 g light brown soft sugar
- 55 g granulated sugar
- 1 medium egg
- 1 tsp vanilla extract
- 275 g plain flour
- 1 tsp bicarbonate of soda
- 1/2 tsp salt
- 1 tbsp cornflour
- 100 g milk chocolate chips
- 100–300 g mini eggs
Instructions
- Preheat the oven to 190ºC (or 170ºC for fan ovens). Line a 9×9 inch baking tray with parchment paper.
- In a mixing bowl, combine melted butter, light brown sugar, and granulated sugar until well mixed.
- Add the egg and vanilla extract; mix until fully incorporated.
- Stir in flour, cornflour, bicarbonate of soda, and salt until combined.
- Fold in chocolate chips and most of the mini eggs into the dough.
- Spread evenly into the prepared baking tray and press remaining mini eggs on top.
- Bake for 18-22 minutes until the top looks dry.
- Allow cooling completely before cutting into squares.
