  • 4 cups mixed berries and stone fruit
  • ¼ cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch
  • 1 tbsp chopped basil
  • ½ cup all-purpose flour
  • 1 cup old-fashioned oats
  • ¼ cup packed brown sugar (light or dark)
  • a teensy pinch of salt
  • 6 tbsp cold, unsalted butter, cut into tiny pieces

Instructions

  1. Preheat your oven to 375°F and prepare three small baking dishes with non-stick spray.
  2. In a bowl, combine the flour, oats, brown sugar, salt, and butter. Mix until crumbly and refrigerate.
  3. In another bowl, toss the fruit with sugar, vanilla extract, cornstarch, lemon zest, lemon juice, and basil until well coated.
  4. Distribute the fruit mixture evenly among the baking dishes and top with the crumble mixture.
  5. Bake for 30-35 minutes until bubbly and golden brown. Cool for at least 10 minutes before serving.
