Ingredients

Scale
  • 4 Tbsp extra-virgin olive oil
  • 3/4 tsp kosher salt
  • 4 Tbsp mild harissa
  • 1 large head cauliflower (about 7 to 8 cups)
  • 2 Tbsp tahini
  • 1 Tbsp honey
  • 2 Tbsp fresh lemon juice
  • 1/4 tsp freshly ground black pepper
  • Fresh chopped parsley (optional) for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, mix 2 tablespoons of olive oil, 1/2 teaspoon of salt, and 2 tablespoons of harissa. Toss in the cauliflower florets until well-coated.
  3. Spread the seasoned cauliflower on a rimmed baking sheet in one layer and roast for about 35 minutes, tossing halfway through.
  4. After roasting, mix in the remaining harissa and return to the oven for an additional 5 to 7 minutes until caramelized.
  5. In another bowl, whisk together the remaining olive oil, tahini, honey, lemon juice, remaining salt (1/4 teaspoon), and black pepper. Adjust consistency with water if needed.
  6. Serve the roasted cauliflower drizzled with tahini-honey sauce and garnish with parsley if desired.
