- 3/4 tsp kosher salt
- 4 Tbsp mild harissa
- 1 large head cauliflower (about 7 to 8 cups)
- 2 Tbsp tahini
- 1 Tbsp honey
- 2 Tbsp fresh lemon juice
- 1/4 tsp freshly ground black pepper
- Fresh chopped parsley (optional) for garnish
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, mix 2 tablespoons of olive oil, 1/2 teaspoon of salt, and 2 tablespoons of harissa. Toss in the cauliflower florets until well-coated.
- Spread the seasoned cauliflower on a rimmed baking sheet in one layer and roast for about 35 minutes, tossing halfway through.
- After roasting, mix in the remaining harissa and return to the oven for an additional 5 to 7 minutes until caramelized.
- In another bowl, whisk together the remaining olive oil, tahini, honey, lemon juice, remaining salt (1/4 teaspoon), and black pepper. Adjust consistency with water if needed.
- Serve the roasted cauliflower drizzled with tahini-honey sauce and garnish with parsley if desired.
