  • 1 lb firm white fish (cod, halibut, or sea bass)
  • 2 medium tomatoes (sliced)
  • 1 large onion (sliced)
  • 1 carrot (sliced)
  • 1 bell pepper (sliced)
  • 1/2 tsp saffron threads (soaked in warm water)
  • 1 tsp ground ginger
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp turmeric
  • 2 tbsp olive oil
  • 2 cloves garlic (minced)
  • 1/2 cup vegetable or fish stock
  • 1 preserved lemon (sliced)
  • 1/4 cup green or black olives
  • 2 tbsp fresh parsley (chopped)
  • 2 tbsp fresh cilantro (chopped)
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients by slicing vegetables and measuring spices.
  2. In a cast iron skillet or tagine, heat olive oil over medium heat.
  3. Sauté sliced onions and minced garlic until soft and fragrant (about 5 minutes).
  4. Add sliced carrots, bell peppers, and tomatoes; cook for another 5–7 minutes until softened.
  5. Stir in ground ginger, paprika, cumin, turmeric, salt, and pepper; mix well.
  6. Nestle the fish into the vegetable mixture; pour in saffron water and stock around the sides.
  7. Cover and simmer on low for about 25–30 minutes until the fish is cooked through.
  8. Garnish with preserved lemon slices, olives, parsley, and cilantro before serving.
