  • 1 28oz can San Marzano whole peeled tomatoes
  • 48oz chicken broth
  • 2 14.5oz cans of cannellini beans
  • 4oz imported turkey slices, diced
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 1lb box of ditalini pasta
  • Extra Virgin Olive Oil

Instructions

  1. Cook the ditalini pasta in salted boiling water until al dente (6-7 minutes). Drain and set aside.
  2. In a large pot, heat olive oil over medium heat and sauté diced onions until translucent (about 5 minutes). Add minced garlic and cook for an additional minute.
  3. Stir in diced turkey slices and cook until heated through (about 5 minutes). Add cannellini beans with their juice.
  4. Break up the whole tomatoes by hand and add to the pot along with chicken broth. Bring to a boil.
  5. Season with ground pepper to taste, reduce heat to low, and let simmer for 15 minutes.
  6. Serve hot with freshly grated cheese and warm bread on the side.
