Ingredients
- 1 28oz can San Marzano whole peeled tomatoes
- 48oz chicken broth
- 2 14.5oz cans of cannellini beans
- 4oz imported turkey slices, diced
- 1 medium yellow onion, diced
- 3 garlic cloves, minced
- 1lb box of ditalini pasta
- Extra Virgin Olive Oil
Instructions
- Cook the ditalini pasta in salted boiling water until al dente (6-7 minutes). Drain and set aside.
- In a large pot, heat olive oil over medium heat and sauté diced onions until translucent (about 5 minutes). Add minced garlic and cook for an additional minute.
- Stir in diced turkey slices and cook until heated through (about 5 minutes). Add cannellini beans with their juice.
- Break up the whole tomatoes by hand and add to the pot along with chicken broth. Bring to a boil.
- Season with ground pepper to taste, reduce heat to low, and let simmer for 15 minutes.
