  • 1 and 1/2 cups packed brown sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon kosher salt
  • 1 cup old-fashioned rolled oats
  • 1 and 1/4 cups blended old-fashioned rolled oats (to flour)
  • 2 and 1/2 cups semisweet chocolate chips

Instructions

  1. Preheat the oven to 325°F (165°C) and line two baking sheets with parchment paper.
  2. In a large bowl or stand mixer, beat the softened butter until creamy. Add the packed brown sugar and mix until fluffy.
  3. Incorporate the egg, egg yolk, and vanilla extract, mixing until fully combined.
  4. Gradually add the all-purpose flour, baking soda, baking powder, and salt without mixing.
  5. Blend in the wet and dry ingredients until just combined. Stir in the rolled oats.
  6. Blend the additional rolled oats into a coarse flour and fold it into the dough.
  7. Gently stir in the chocolate chips until evenly distributed.
  8. Shape dough balls (about 2 inches) on prepared sheets, leaving space between them.
  9. Bake for 9–10 minutes until edges are firm; reshape cookies if needed while warm.
  10. Allow to cool on the pan for about 5–10 minutes before transferring to a wire rack.
