  • 1 ½ pounds boneless, skinless chicken breasts (cubed)
  • 8 ounces dry orzo
  • 2 ½ cups low sodium chicken broth
  • ½ cup diced yellow onion
  • 2 cups chopped asparagus
  • ⅓ cup half and half (or milk)
  • ⅓ cup freshly grated parmesan cheese
  • Fresh spinach and parsley for garnish

Instructions

  1. Season the cubed chicken with garlic powder, salt, pepper, and red pepper flakes.
  2. In a large high-sided pan, heat olive oil over medium-high heat. Cook the seasoned chicken until browned; set aside.
  3. Sauté onion and asparagus in the same pan until tender. Add orzo and toast slightly.
  4. Pour in chicken broth; bring to a simmer for about 7 minutes until liquid is mostly absorbed.
  5. Stir in cooked chicken, half and half, parmesan cheese, spinach, and thyme; heat through until spinach wilts.
  6. Serve garnished with parsley and extra parmesan.
