  • 1 can (14.5 ounces) diced tomatoes (optional)
  • 1 pound shrimp (peeled and deveined)
  • 2 green onions (chopped)
  • Fresh parsley (chopped)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté sliced sausage until browned.
  2. Add diced onion, green bell pepper, red bell pepper, celery, and minced garlic; cook until softened.
  3. Stir in long-grain white rice, Cajun seasoning, smoked paprika, dried thyme, cayenne pepper (if using), salt, and pepper.
  4. Pour in chicken broth and diced tomatoes if desired; bring to a gentle boil then reduce heat to low.
  5. Cover and simmer for 20 minutes; add shrimp and stir gently. Cover again and cook for an additional 5–7 minutes until shrimp are pink.
