- 1 cup boiling water
- 1/2 cup unsalted butter, softened
- 3/4 cup light brown sugar
- 2 large eggs
- Zest and juice of 2 oranges
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon salt
- For the honey drizzle: 1/4 cup honey and 1 tablespoon fresh orange juice
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease an 8-inch cake tin.
- In a bowl, whisk together flour, baking powder, baking soda, cardamom, and salt.
- In another bowl, cream the softened butter and brown sugar until smooth. Add eggs, orange zest, and orange juice; mix well.
- Fold in the chopped dates until evenly distributed.
- Gradually combine dry ingredients with wet ingredients until just mixed.
- Pour the batter into the prepared cake tin and bake for about 40–45 minutes or until a toothpick inserted comes out clean.
- While baking, prepare the honey drizzle by warming honey and orange juice in a saucepan.
- Once baked, drizzle the honey mixture over the warm cake and let cool before serving.
