  • 1 cup pitted dates, chopped
  • 1 cup boiling water
  • 1/2 cup unsalted butter, softened
  • 3/4 cup light brown sugar
  • 2 large eggs
  • Zest and juice of 2 oranges
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon salt
  • For the honey drizzle: 1/4 cup honey and 1 tablespoon fresh orange juice

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease an 8-inch cake tin.
  2. In a bowl, whisk together flour, baking powder, baking soda, cardamom, and salt.
  3. In another bowl, cream the softened butter and brown sugar until smooth. Add eggs, orange zest, and orange juice; mix well.
  4. Fold in the chopped dates until evenly distributed.
  5. Gradually combine dry ingredients with wet ingredients until just mixed.
  6. Pour the batter into the prepared cake tin and bake for about 40–45 minutes or until a toothpick inserted comes out clean.
  7. While baking, prepare the honey drizzle by warming honey and orange juice in a saucepan.
  8. Once baked, drizzle the honey mixture over the warm cake and let cool before serving.
