  • 1 cup baby potatoes or Yukon gold, cubed
  • 1 ripe avocado
  • 1 tsp olive oil
  • Salt, pepper, garlic powder, paprika (to taste)
  • 1 tbsp olive oil (for potatoes)
  • 1 tsp smoked paprika
  • 1 tbsp chopped tomato
  • 1 tbsp chopped red onion or green onion
  • Lime juice and salt, to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Toss cubed potatoes with olive oil, smoked paprika, salt, and pepper on a baking sheet. Roast for 25-30 minutes until crispy.
  2. While the potatoes roast, season the fish fillet with salt, pepper, garlic powder, and paprika. Heat olive oil in a skillet over medium-high heat and sear the fish for 3-4 minutes per side until cooked through and golden.
  3. For the guacamole, mash the ripe avocado in a mixing bowl. Stir in chopped tomato, onion (red or green), lime juice, and salt until well combined yet chunky.
  4. Serve the pan-seared fish alongside roasted potatoes topped with a generous scoop of guacamole. Enjoy warm!
