  • 2 and 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • Red gel food coloring
  • 1/4 cup coarse sugar or crushed peppermint candies

Instructions

  1. Whisk together flour, baking powder, and salt in a bowl; set aside.
  2. Cream softened butter and sugar in a large bowl until light and fluffy. Add egg, vanilla, and peppermint extract; mix well.
  3. Gradually combine dry ingredients with wet mixture until just combined.
  4. Divide dough in half; color one half with red gel food coloring.
  5. Chill both doughs wrapped in plastic for at least 30 minutes.
  6. Roll out each dough separately into rectangles of equal size (10×12 inches).
  7. Layer the red dough on top of the plain dough; roll tightly into a log.
  8. Chill again for at least 2 hours before slicing into rounds.
  9. Preheat oven to 375°F (190°C); line baking sheets with parchment paper.
  10. Slice the chilled log into cookies, coat with coarse sugar if desired, and bake for 8 to 10 minutes.
