- Red gel food coloring
- 1/4 cup coarse sugar or crushed peppermint candies
Instructions
- Whisk together flour, baking powder, and salt in a bowl; set aside.
- Cream softened butter and sugar in a large bowl until light and fluffy. Add egg, vanilla, and peppermint extract; mix well.
- Gradually combine dry ingredients with wet mixture until just combined.
- Divide dough in half; color one half with red gel food coloring.
- Chill both doughs wrapped in plastic for at least 30 minutes.
- Roll out each dough separately into rectangles of equal size (10×12 inches).
- Layer the red dough on top of the plain dough; roll tightly into a log.
- Chill again for at least 2 hours before slicing into rounds.
- Preheat oven to 375°F (190°C); line baking sheets with parchment paper.
- Slice the chilled log into cookies, coat with coarse sugar if desired, and bake for 8 to 10 minutes.
