  • 2 pounds boneless, skinless chicken thighs
  • 5 cloves garlic
  • 1/3 cup soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • Black pepper
  • 3 jalapeños (seeded, ribs removed and roughly chopped)
  • 1 cup fresh cilantro leaves
  • 2 green onions (chopped (green parts only))
  • 2 cloves garlic (peeled)
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 1 tablespoon lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons extra virgin olive oil

Instructions

  1. In a mixing bowl, whisk together garlic, soy sauce, lime juice, olive oil, cumin, paprika, oregano, and black pepper.
  2. Add chicken thighs to the marinade and coat well. Cover and refrigerate for at least 30 minutes (up to 4 hours).
  3. In another bowl, blend jalapeños, cilantro leaves, green onions, garlic cloves, mayonnaise, Greek yogurt, lime juice, salt, black pepper, and olive oil until smooth.
  4. Preheat the grill to medium heat. Grill marinated chicken for about 6-7 minutes per side until cooked through (internal temperature of 165°F).
  5. Allow to rest for a few minutes before slicing. Serve with creamy green sauce and your choice of sides.
