- 1 teaspoon sesame oil
- 2 teaspoons minced fresh ginger
- 3 cloves garlic (minced)
- 1 ½ tablespoons cornstarch
- 2 ½ tablespoons avocado oil or olive oil (divided)
- Salt and pepper to taste
- 1 small red onion (chopped into 1-inch pieces)
- 1 red bell pepper (chopped into 1-inch pieces)
- 4 cups broccoli florets (chopped into small bite-size pieces)
- 20 ounces canned pineapple chunks in 100% juice (reserve the juice for the sauce)
- Cooked rice (optional, for serving)
- Chopped green onions (optional, for serving)
Instructions
- In a medium bowl, combine the teriyaki sauce ingredients: soy sauce, pineapple juice, brown sugar, honey, rice vinegar, sesame oil, ginger, garlic, and cornstarch. Whisk until smooth.
- Heat 1 tablespoon oil in a large skillet over medium-high heat. Add chicken pieces seasoned with salt and pepper. Cook for 7-10 minutes until browned and cooked through.
- Add remaining oil along with chopped onion, bell pepper, and broccoli to the skillet. Stir-fry for about 4 minutes until vegetables are crisp-tender.
- Return the cooked chicken to the skillet along with pineapple chunks. Pour in the teriyaki sauce and cook for an additional 1-2 minutes until the sauce begins to thicken.
- Serve over cooked rice or wrapped in lettuce leaves as desired.
