  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 teaspoons minced fresh ginger
  • 3 cloves garlic (minced)
  • 1 ½ tablespoons cornstarch
  • 2 ½ tablespoons avocado oil or olive oil (divided)
  • Salt and pepper to taste
  • 1 small red onion (chopped into 1-inch pieces)
  • 1 red bell pepper (chopped into 1-inch pieces)
  • 4 cups broccoli florets (chopped into small bite-size pieces)
  • 20 ounces canned pineapple chunks in 100% juice (reserve the juice for the sauce)
  • Cooked rice (optional, for serving)
  • Chopped green onions (optional, for serving)

Instructions

  1. In a medium bowl, combine the teriyaki sauce ingredients: soy sauce, pineapple juice, brown sugar, honey, rice vinegar, sesame oil, ginger, garlic, and cornstarch. Whisk until smooth.
  2. Heat 1 tablespoon oil in a large skillet over medium-high heat. Add chicken pieces seasoned with salt and pepper. Cook for 7-10 minutes until browned and cooked through.
  3. Add remaining oil along with chopped onion, bell pepper, and broccoli to the skillet. Stir-fry for about 4 minutes until vegetables are crisp-tender.
  4. Return the cooked chicken to the skillet along with pineapple chunks. Pour in the teriyaki sauce and cook for an additional 1-2 minutes until the sauce begins to thicken.
  5. Serve over cooked rice or wrapped in lettuce leaves as desired.
