Ingredients
- 4 large ripe plantains
- 1 lb ground beef
- 2 tsp adobo seasoning
- 1 tbsp sazon seasoning
- 1 onion (minced)
- 3 garlic cloves (minced)
- 1 green bell pepper (minced)
- ¼ cup fresh cilantro (chopped)
- ⅓ cup olives or capers
- 1 cup tomato sauce
- 2 cups dairy-free cheese
- 3 large eggs (beaten)
- Coconut oil for cooking
Instructions
- Preheat the oven to 356°F (180°C).
- Grease a casserole dish with coconut oil.
- In a bowl, season ground beef with adobo and sazon.
- In a skillet, heat coconut oil and sauté onion, garlic, bell pepper, and cilantro until soft.
- Add seasoned beef to the skillet; cook until browned. Stir in tomato sauce and olives/capers; simmer for 5-10 minutes.
- Prepare plantains by cutting ends and scoring the skin; slice into strips.
- Fry plantain strips in coconut oil until golden brown; drain excess oil.
- Layer half of the fried plantains in the bottom of the greased casserole dish; brush with egg wash.
- Spoon half the beef mixture over the plantains; sprinkle with dairy-free cheese.
- Repeat layers with remaining plantains, beef mixture, and cheese.
- Finish with a layer of plantains, egg wash, and cheese on top.
- Bake for about 20 minutes or until golden brown.
- Let cool briefly before serving.
