  • 4 large ripe plantains
  • 1 lb ground beef
  • 2 tsp adobo seasoning
  • 1 tbsp sazon seasoning
  • 1 onion (minced)
  • 3 garlic cloves (minced)
  • 1 green bell pepper (minced)
  • ¼ cup fresh cilantro (chopped)
  • ⅓ cup olives or capers
  • 1 cup tomato sauce
  • 2 cups dairy-free cheese
  • 3 large eggs (beaten)
  • Coconut oil for cooking

Instructions

  1. Preheat the oven to 356°F (180°C).
  2. Grease a casserole dish with coconut oil.
  3. In a bowl, season ground beef with adobo and sazon.
  4. In a skillet, heat coconut oil and sauté onion, garlic, bell pepper, and cilantro until soft.
  5. Add seasoned beef to the skillet; cook until browned. Stir in tomato sauce and olives/capers; simmer for 5-10 minutes.
  6. Prepare plantains by cutting ends and scoring the skin; slice into strips.
  7. Fry plantain strips in coconut oil until golden brown; drain excess oil.
  8. Layer half of the fried plantains in the bottom of the greased casserole dish; brush with egg wash.
  9. Spoon half the beef mixture over the plantains; sprinkle with dairy-free cheese.
  10. Repeat layers with remaining plantains, beef mixture, and cheese.
  11. Finish with a layer of plantains, egg wash, and cheese on top.
  12. Bake for about 20 minutes or until golden brown.
  13. Let cool briefly before serving.
