- 1 cup cold butter (diced)
- ½ cup ice water
- 6 slices turkey bacon (diced)
- 1 large onion (diced)
- 2 lb yellow flesh potatoes (diced)
- 1 cup heavy cream
- 1 ½ cups shredded cheddar cheese
- 1 egg (beaten)
Instructions
- Prepare the dough by mixing flour and salt in a bowl. Add diced butter and blend until crumbly. Gradually add ice water until the mixture holds together. Shape into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
- Cook turkey bacon in a skillet over medium heat until crispy; set aside. Sauté onions in the same skillet until translucent. Add diced potatoes with enough water to cover; cook until just tender.
- Combine cooked turkey bacon, potatoes, onions, heavy cream, flour, salt, pepper, and cheese in a large bowl.
- Preheat oven to 400°F (200°C). Roll out half the dough for the bottom crust; place it in a pie dish and fill with potato mixture. Roll remaining dough for the top crust; seal edges.
