  • 1 3/4 cups all-purpose flour

  • 1/2 teaspoon salt
  • 1 quart oil for frying (peanut, canola, or vegetable)
  • For coating: 1/2 cup granulated sugar and 2 teaspoons cinnamon
  • 8 oz cream cheese (softened)
  • 1/4 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1/4 cup milk
  • 1 tablespoon vanilla extract
  • 2 teaspoons cinnamon
  • 23 tablespoons pumpkin purée (to taste)

Instructions

  1. Prepare the cream cheese dip by mixing softened cream cheese, granulated sugar, brown sugar, milk, vanilla extract, cinnamon, and pumpkin puree until smooth; set aside.
  2. Combine sugar and cinnamon in a small bowl for coating; set aside.
  3. In a large bowl, whisk together water, pumpkin puree, oil, and vanilla extract. Gradually add flour, granulated sugar, pumpkin pie spice, and salt until well combined.
  4. Heat oil in a deep fryer or skillet to 375°F using a candy thermometer.
  5. Pipe churro dough into hot oil in 4-inch strips and fry until golden brown (about two minutes per side). Remove and drain on paper towels.
  6. Toss warm churros in cinnamon sugar mixture until fully coated before serving with the cream cheese dip.
