- 1 quart oil for frying (peanut, canola, or vegetable)
- For coating: 1/2 cup granulated sugar and 2 teaspoons cinnamon
- 8 oz cream cheese (softened)
- 1/4 cup granulated sugar
- 1/4 cup light brown sugar
- 1/4 cup milk
- 1 tablespoon vanilla extract
- 2 teaspoons cinnamon
- 2–3 tablespoons pumpkin purée (to taste)
Instructions
- Prepare the cream cheese dip by mixing softened cream cheese, granulated sugar, brown sugar, milk, vanilla extract, cinnamon, and pumpkin puree until smooth; set aside.
- Combine sugar and cinnamon in a small bowl for coating; set aside.
- In a large bowl, whisk together water, pumpkin puree, oil, and vanilla extract. Gradually add flour, granulated sugar, pumpkin pie spice, and salt until well combined.
- Heat oil in a deep fryer or skillet to 375°F using a candy thermometer.
- Pipe churro dough into hot oil in 4-inch strips and fry until golden brown (about two minutes per side). Remove and drain on paper towels.
- Toss warm churros in cinnamon sugar mixture until fully coated before serving with the cream cheese dip.
