  • 8 oz flank, skirt, or sirloin steak (thinly sliced)
  • 2 (7 oz) packs cooked or frozen udon noodles
  • 1 tbsp vegetable oil
  • ½ small onion (thinly sliced)
  • 3 garlic cloves (minced)
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp hoisin sauce
  • 1 tsp sugar
  • 1 tbsp cornstarch mixed with 3 tbsp water (slurry)
  • 1 tsp freshly cracked black pepper
  • Optional: Sliced scallions and sesame seeds for garnish

Instructions

  1. Slice the beef thinly against the grain and season lightly with salt and pepper. Toss with soy sauce and cornstarch if desired.
  2. In a small bowl, combine soy sauce, hoisin sauce, sugar, black pepper, sesame oil, and cornstarch slurry; whisk until smooth.
  3. Heat oil in a large skillet over medium-high heat. Add beef and sear until browned; remove from skillet.
  4. In the same skillet, sauté onion and garlic for 1–2 minutes until fragrant.
  5. Add udon noodles and prepared sauce; toss until well combined and heated through.
  6. Return beef to the pan; toss to combine. Serve immediately garnished with scallions and sesame seeds if desired.
