  • 2 lb turkey sausage (caseless)
  • 1 yellow onion, chopped
  • 2 large carrots, sliced
  • 3 stalks celery, thinly sliced
  • 5 cloves garlic, minced
  • 32 oz low-sodium beef broth
  • 1 cup water
  • 32 oz marinara sauce
  • 16 oz red beans (canned)
  • 16 oz cannellini beans (canned)
  • 1 cup dry ditalini pasta
  • Fresh parsley for garnish

Instructions

  1. In a large pot over medium-high heat, crumble and cook the turkey sausage until fully cooked.
  2. Add chopped onions, carrots, and celery. Sauté until tender; add minced garlic and sauté for another minute.
  3. Pour in beef broth along with marinara sauce, sugar, basil, oregano, thyme, and stir well.
  4. Bring to a boil. Reduce heat to low; cover and simmer for about 10 minutes.
  5. Stir in ditalini pasta, water, kidney beans, and cannellini beans. Cook until pasta is al dente (about 5 minutes).
  6. Season with salt and pepper to taste before serving.
