Ingredients
- 2 lb turkey sausage (caseless)
- 1 yellow onion, chopped
- 2 large carrots, sliced
- 3 stalks celery, thinly sliced
- 5 cloves garlic, minced
- 32 oz low-sodium beef broth
- 1 cup water
- 32 oz marinara sauce
- 16 oz red beans (canned)
- 16 oz cannellini beans (canned)
- 1 cup dry ditalini pasta
- Fresh parsley for garnish
Instructions
- In a large pot over medium-high heat, crumble and cook the turkey sausage until fully cooked.
- Add chopped onions, carrots, and celery. Sauté until tender; add minced garlic and sauté for another minute.
- Pour in beef broth along with marinara sauce, sugar, basil, oregano, thyme, and stir well.
- Bring to a boil. Reduce heat to low; cover and simmer for about 10 minutes.
- Stir in ditalini pasta, water, kidney beans, and cannellini beans. Cook until pasta is al dente (about 5 minutes).
- Season with salt and pepper to taste before serving.
