  • 2 tbsp vegetable or coconut oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced (+ extra for garlic naan brushing)
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry paste (Madras or Indian blend)
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 beef stock cube
  • 1 can (14 oz) coconut milk
  • 2 tbsp tomato paste
  • Salt and freshly ground pepper to taste
  • Fresh cilantro, chopped for garnish

Instructions

  1. Sauté aromatics: In a large skillet, heat oil over medium heat. Add onion; cook until translucent (about 5 minutes). Stir in garlic and ginger; cook for another minute until fragrant.
  2. Combine ingredients: Transfer the sautéed mixture to a slow cooker. Add beef cubes, curry paste, turmeric, cumin, paprika, beef stock cube, coconut milk, tomato paste, salt, and pepper. Stir until well combined.
  3. Slow cook: Cover and set the slow cooker on low heat. Cook for about 6-8 hours until the beef is tender.
  4. Prepare garlic naan (optional): Mix flour with water, yeast, salt, and oil to form a dough. Roll out small rounds; brush with minced garlic mixed with oil before baking or pan-frying till golden.
  5. Serve: Adjust seasoning of the curry if needed. Serve hot garnished with fresh cilantro alongside garlic naan or rice.
