- 1 large onion, finely sliced
- 6 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 1 cup plain yogurt
- 2 teaspoons Kashmiri chili powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground cinnamon
- 4 green cardamom pods
Instructions
- Heat ghee or oil in a heavy-bottomed pot over medium-high heat. Sear lamb chunks until browned on all sides; set aside.
- In the same pot, sauté onions until translucent. Add garlic and ginger; cook until fragrant.
- Stir in spices and return lamb to the pot with any collected juices.
- Gradually add whisked yogurt while stirring to prevent curdling.
- Cover and simmer on low heat for 2-3 hours until lamb is tender.
