  • 2 lbs lamb shoulder, cut into chunks
  • 2 tablespoons ghee or oil
  • 1 large onion, finely sliced
  • 6 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 cup plain yogurt
  • 2 teaspoons Kashmiri chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 4 green cardamom pods

Instructions

  1. Heat ghee or oil in a heavy-bottomed pot over medium-high heat. Sear lamb chunks until browned on all sides; set aside.
  2. In the same pot, sauté onions until translucent. Add garlic and ginger; cook until fragrant.
  3. Stir in spices and return lamb to the pot with any collected juices.
  4. Gradually add whisked yogurt while stirring to prevent curdling.
  5. Cover and simmer on low heat for 2-3 hours until lamb is tender.
