  • 2 pounds beef stew meat, cut into 1-inch cubes
  • 1 tablespoon vinegar (in place of Worcestershire sauce)
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 pounds baby potatoes, halved
  • 4 tablespoons unsalted butter, melted
  • 3 tablespoons olive oil
  • 5 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped, for garnish

Instructions

  1. In a large bowl, mix the beef cubes with vinegar, salt, black pepper, Italian seasoning, and smoked paprika until evenly coated.
  2. Layer halved baby potatoes in the slow cooker. Drizzle with half of the melted butter and olive oil, then sprinkle minced garlic over the potatoes.
  3. Add seasoned beef on top of the potatoes and drizzle with remaining butter and olive oil.
  4. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until beef is fork-tender.
  5. Gently stir before serving and garnish with chopped parsley.
