  • 2 lbs lamb shoulder, cut into chunks
  • 1 large onion, sliced
  • 3 carrots, chopped
  • 1 can chickpeas, drained and rinsed
  • 1 cup dried apricots
  • 3 cloves garlic, minced
  • 2 tbsp ras el hanout spice mix
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1 tbsp tomato paste
  • 2 cups chicken broth
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Mix ras el hanout, cumin, cinnamon, salt, pepper, and olive oil in a bowl to create a spice paste.
  2. Coat lamb pieces with the spice paste and marinate for at least 1 hour or overnight.
  3. Layer sliced onions at the bottom of the slow cooker. Add marinated lamb on top.
  4. Add carrots, chickpeas, and apricots. Mix tomato paste with broth and pour over all ingredients.
  5. Cover and cook on low for 7-8 hours until lamb is tender.
  6. Taste and adjust seasoning if needed before serving.
