Ingredients
- 1 1/2 cups dry short grain sushi rice
- 2 cups water
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1 can (12 oz) Spam
- 2 1/2 teaspoons soy sauce
- 2 tablespoons sugar (for caramelization)
- 1/4 cup water (for caramelization)
- 6 eggs
- 3 sheets roasted seaweed nori (cut into strips)
Instructions
- Rinse the sushi rice under cold water until the water runs clear. Cook the rice with water in a rice cooker or pot.
- In a small bowl, combine rice vinegar, sugar, and salt; mix until dissolved. Once the rice is done cooking, fold this mixture into the rice gently.
- Slice Spam into thick pieces and cook in a skillet over medium-high heat until crispy.
- Prepare the caramelization by combining soy sauce and water in another bowl. Sprinkle sugar on both sides of each spam slice and pour in the soy sauce mixture, simmering until slightly thickened.
- Whisk the eggs together and cook them in a pan to make a thin omelet. Roll up and cut into strips.
- For assembly, place sushi rice in a mold or on plastic wrap, layer with egg strips and spam, then roll tightly with nori.
