  • 1 salmon fillet
  • 1012 baby potatoes
  • 23 large eggs
  • 1 ripe avocado
  • 1 tsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • 1 tbsp butter
  • 1 garlic clove, minced
  • 1 tbsp fresh dill (or parsley), chopped

Instructions

  1. Boil baby potatoes in salted water for 12-15 minutes until fork-tender. Drain and toss with butter, minced garlic, dill (or parsley), salt, and pepper.
  2. Boil eggs in water for 7 minutes for jammy yolks or 9 minutes for firm yolks. Transfer to ice water, peel, and slice.
  3. Season salmon fillet with smoked paprika, garlic powder, salt, and pepper. Sear in olive oil over medium-high heat for 4-5 minutes on each side until golden brown.
  4. Arrange potatoes, sliced eggs, seared salmon, and avocado on a plate. Sprinkle avocado with salt before serving.
