Ingredients
- 1 salmon fillet
- 10–12 baby potatoes
- 2–3 large eggs
- 1 ripe avocado
- 1 tsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- Salt & pepper to taste
- 1 tbsp butter
- 1 garlic clove, minced
- 1 tbsp fresh dill (or parsley), chopped
Instructions
- Boil baby potatoes in salted water for 12-15 minutes until fork-tender. Drain and toss with butter, minced garlic, dill (or parsley), salt, and pepper.
- Boil eggs in water for 7 minutes for jammy yolks or 9 minutes for firm yolks. Transfer to ice water, peel, and slice.
- Season salmon fillet with smoked paprika, garlic powder, salt, and pepper. Sear in olive oil over medium-high heat for 4-5 minutes on each side until golden brown.
- Arrange potatoes, sliced eggs, seared salmon, and avocado on a plate. Sprinkle avocado with salt before serving.
