  • 150g boneless, skinless chicken breast
  • 1 tsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp cayenne pepper (adjust to spice preference)
  • Salt & black pepper, to taste
  • 1 cup uncooked white rice
  • 1 cup water
  • Pinch of salt
  • 1 cup sliced cucumber
  • 1 cup cherry tomatoes, halved
  • 2 tbsp diced red onion
  • 1 tsp chopped fresh parsley or dill
  • 1 avocado, sliced
  • 1 tbsp spicy mayo (mayonnaise mixed with sriracha)

Instructions

  1. Rinse the rice until water is clear. Combine with water and a pinch of salt in a pot. Boil, then cover and reduce heat. Cook for 12-15 minutes until fluffy.
  2. In a skillet, toss chicken cubes with olive oil, paprika, garlic powder, cayenne pepper, salt, and black pepper. Cook over medium-high heat for 6-8 minutes until golden brown and fully cooked.
  3. In a mixing bowl, combine cucumber, cherry tomatoes, diced red onion, parsley or dill. Season with salt and pepper; toss gently.
  4. Assemble the bowl with rice at the base, topped with avocado slices, cooked chicken, salad mix, and a drizzle of spicy mayo.
