  • 2 carrots (diced)
  • 2 celery stalks (diced)
  • 3 cloves garlic (minced)
  • 28 oz crushed tomatoes
  • 4 cups chicken broth
  • 1 cup water
  • 15 oz red kidney beans (drained and rinsed)
  • 15 oz cannellini beans (drained and rinsed)
  • 1 cup ditalini pasta
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp red pepper flakes (optional, for extra heat)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion, carrots, celery, and minced garlic for about 5-7 minutes until softened.
  2. Add the spicy Italian sausage to the pot, breaking it apart with a wooden spoon. Cook until browned.
  3. Stir in crushed tomatoes, chicken broth, water, red kidney beans, cannellini beans, pasta, oregano, basil, red pepper flakes (if using), salt, and pepper.
  4. Bring to a boil; then reduce heat to low and let it simmer uncovered for about 20 minutes until the pasta is tender.
  5. Remove from heat, adjust seasoning if necessary, and serve hot.
