- 1 cup almond flour
- 1/2 cup rolled oats
- 1/2 cup unsweetened shredded coconut
- 3 tbsp maple syrup
- 2 tbsp coconut oil
- 1 cup fresh strawberries (finely diced)
- 454 g silken tofu (drained)
- 1/3 cup maple syrup
- 1/4 cup raw cacao powder
- 3 tbsp corn starch
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 375°F (190°C). Line an 8 x 8-inch baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, rolled oats, shredded coconut, maple syrup, and coconut oil. Mix until crumbly yet cohesive. Press this mixture firmly into the bottom of the prepared baking sheet.
- In a food processor, blend the drained silken tofu until smooth. Add finely diced strawberries, additional maple syrup, raw cacao powder, corn starch, and vanilla extract. Process until creamy.
- Pour the filling over the crust and spread it evenly. Bake for about 32 minutes or until set.
- Allow to cool completely before cutting into squares.
