  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • 2 tsp strawberry extract (optional)
  • 1/2 tsp red food coloring (optional)
  • 2 tbsp strawberry puree (reserved from the cake)
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp pure lemon juice or lime juice

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Wash and hull the strawberries; reserve some puree for the glaze.
  3. In a mixing bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time.
  4. In another bowl, whisk flour, salt, and baking soda. Gradually combine with the butter mixture.
  5. Mix in buttermilk and extracts until well blended.
  6. Pour into a greased loaf pan and smooth the top.
  7. Bake for about 70 minutes or until a toothpick comes out clean.
  8. Create the glaze by mixing powdered sugar with reserved strawberry puree and lemon juice.
  9. Once cooled, drizzle the glaze over the cake before serving.
