Ingredients
- 4 cups strawberries
- ½ cup water
- ¾ cup granulated sugar
- 4 tablespoons lemon juice
- 1 ½ cups heavy cream
- 16 oz mascarpone cheese
- 260 g ladyfingers
- 2–3 tablespoons freeze-dried strawberries (powdered)
Instructions
- Prepare the strawberry syrup: Cook strawberries with water over low heat for 5 minutes. Mash, strain through a sieve, then mix in sugar and lemon juice before simmering until thickened.
- Make the mascarpone filling: Whisk mascarpone, sugar, and vanilla until smooth. In another bowl, whip cream to stiff peaks and fold gently into the mascarpone mixture along with cooled syrup.
- Assemble: Dip ladyfingers in syrup briefly, layer them in a dish, then spread half of the mascarpone filling over. Repeat layers and refrigerate for at least 6 hours or overnight.
