- 4 yellow plantains
- 1 lb ground beef
- ½ medium onion
- 2 garlic cloves
- ½ green bell pepper
- ½ red bell pepper
- ¼ cup tomato sauce
- ¼ cup beef bone broth
- 2 tbsp avocado oil
- 1 tbsp adobo seasoning
- 1 tsp kosher salt
- ½ tsp ground black pepper
- ¼ – ½ tsp cayenne pepper
Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Cut the ends off the plantains, score the skin, and peel them.
- Coat the plantains with 1 tablespoon of avocado oil and roast for 30 minutes, flipping halfway.
- While roasting, heat a skillet with 1 tablespoon of avocado oil over medium heat. Sauté diced onion, garlic, green and red bell peppers until translucent.
- Add ground beef to the skillet, cooking until browned. Stir in adobo seasoning, tomato sauce, beef broth, salt, black pepper, and cayenne; simmer for about 10 minutes.
- Remove roasted plantains from the oven and cut a slit lengthwise without cutting all the way through. Stuff each plantain with the beef mixture.
