  • 1 cup pineapple juice
  • 1/2 cup soy sauce (regular or low-sodium)
  • 1/4 cup brown sugar
  • 3 cloves garlic (minced)
  • 1 teaspoon ground ginger (optional)
  • 1 medium red bell pepper (thinly sliced)
  • 2 tablespoons cornstarch
  • 1/4 cup water
  • 4 cups rice (Jasmine or coconut rice recommended)
  • Salt & pepper (to taste)
  • Green onions (optional garnish)
  • Sesame seeds (optional garnish)

Instructions

  1. Place the chicken in the slow cooker.
  2. In a mixing bowl, combine pineapple juice, soy sauce, brown sugar, minced garlic, and ground ginger (if using). Mix well until dissolved.
  3. Pour the sauce over the chicken and add sliced red bell pepper on top.
  4. Cover and cook on low for about 5 hours or until the chicken is tender.
  5. Remove chicken and keep warm. Mix cornstarch with water until smooth, then stir into the remaining sauce in the slow cooker. Cook on high until thickened (about 10 minutes).
  6. Serve over cooked rice and garnish with pineapple chunks, green onions, and sesame seeds if desired.
