  • 2 large sweet potatoes, peeled and cut into 1-inch cubes
  • 12 slices turkey bacon, halved or cut into thirds
  • ¼ cup brown sugar
  • 2 tbsp maple syrup or honey
  • 1 tbsp olive oil
  • ½ tsp cinnamon
  • ¼ tsp cayenne or chili powder (optional)
  • ½ tsp garlic powder (optional)
  • Fresh rosemary or thyme (optional)
  • Sea salt for finishing
  • Vegan marshmallows fluff (optional)
  • Spicy aioli (optional)
  • Maple mustard (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Parboil sweet potato cubes for 5–7 minutes until just fork-tender; drain and cool slightly.
  3. In a mixing bowl, whisk together brown sugar, maple syrup, olive oil, cinnamon, cayenne (if using), and garlic powder until smooth.
  4. Toss parboiled sweet potato cubes in the glaze until evenly coated.
  5. Wrap each sweet potato cube with turkey bacon and assemble on skewers.
  6. Bake for 25–30 minutes, flipping halfway through until bacon is crispy and potatoes are caramelized.
  7. Brush with additional glaze during the last 5 minutes if desired. Serve warm with optional dipping sauces.
