  • 1 lb beef ribs (chopped into 1-inch pieces)
  • 1 lb daikon radish (chopped into chunks)
  • 1 inch ginger (thinly sliced)
  • 5 cloves garlic (peeled)
  • Water
  • 2 tsp salt
  • 1 tsp white pepper
  • Cilantro or scallions (for garnish)

Instructions

  1. Blanch the beef ribs in a large pot of cold water for 3-4 minutes to remove impurities. Drain and set aside.
  2. In the same pot, combine blanched beef ribs, chopped daikon, sliced ginger, and garlic. Fill with about 2 liters of water until all ingredients are submerged.
  3. Bring to a boil, then reduce heat to simmer with the lid on for 45 minutes to an hour until the beef is fork-tender.
  4. Season with salt and white pepper to taste before serving hot.
  5. Garnish with fresh cilantro or sliced scallions.
