Ingredients

- 10 cups water
- 1 yellow onion (with skin if organic)
- 2 green onions or 1 Korean leek
- 2 thick slices of ginger

Instructions
- In a large pot, combine beef short ribs and water along with the whole yellow onion, ginger slices, and green onions. Bring to a boil over medium-high heat.
- Once boiling, reduce heat to low, cover partially with a lid, and simmer for about 90 minutes.
- After simmering, add radish slices and garlic. Stir in soy sauce and sea salt; cook for an additional 10–15 minutes until radish is tender.
