Ingredients

Scale
  • 1 batch 5-Minute Hard Caramel
  • 1 1/2 cups light brown sugar
  • 16 tablespoons unsalted butter (room temperature)
  • 1/2 cup granulated sugar
  • 1 ½ tablespoons real vanilla extract
  • 2 large eggs (room temperature)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon sea salt
  • 3 ¼ cups all-purpose flour
  • 1 1/2 cups dark chocolate (coarsely chopped or chips)
  • Sea salt flakes for topping (optional)

Instructions

  1. Prepare the hard caramel and allow it to cool.
  2. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  3. In a mixing bowl, cream together the unsalted butter with light brown sugar and granulated sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  5. In another bowl, whisk baking powder, baking soda, sea salt, and flour together. Gradually mix this into the wet ingredients until just combined.
  6. Fold in the dark chocolate and hard caramel pieces evenly throughout the dough.
  7. Using a cookie scoop, drop spoonfuls onto the prepared baking sheets, leaving space between them.
  8. Bake for about 12 minutes or until edges are golden while centers remain soft.
  9. Let cool briefly on the baking sheet before transferring to a wire rack.
