  • Olive oil
  • 1 large White Onion, finely diced
  • 1 large Red Pepper, finely diced
  • 3 large cloves of Garlic, finely diced
  • 2.2lbs / 1kg Ground Beef
  • 2 heaped tbsp Tomato Puree
  • 1 cup / 240ml Red apple vinegar
  • 2 x 14oz/400g cans Chopped Tomatoes
  • 2 x 14oz/400g cans Kidney Beans, drained
  • 2 Beef Stock Cubes
  • 2 tbsp Paprika
  • 2 tbsp Cumin
  • 2 tbsp Chilli Powder
  • 1 tsp Oregano
  • 1 tsp Ground Coriander
  • 1 tsp Sugar
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • Rice
  • Grated Cheddar Cheese
  • Lime Wedges
  • Sour Cream
  • Fresh Coriander

Instructions

  1. Heat olive oil in a large deep pot over medium heat. Sauté diced onion, red pepper, and garlic until softened.
  2. Add ground beef to the pot. Cook until browned, breaking it apart with a wooden spoon. Stir in tomato puree and deglaze with red apple vinegar.
  3. Incorporate chopped tomatoes and drained kidney beans. Add water from the emptied tomato cans and stir in beef stock cubes along with spices.
  4. Bring to a simmer, cover with a lid, reduce heat to low, and let cook for 1 hour 30 minutes.
  5. Remove lid to thicken sauce as desired before serving.
