  • ⅓ cup coconut sugar
  • ¼ cup maple syrup
  • ¼ cup non-dairy milk
  • 2 tsp vanilla extract
  • 2 cups oat flour
  • 3 tbsp coconut oil (melted)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp salt
  • ⅓ cup vegan chocolate chips (plus more for topping)
  • ¼ cup walnuts (chopped)

Instructions

  1. Preheat oven to 350°F and line a loaf pan with parchment paper.
  2. In a large bowl, whisk together mashed bananas, coconut sugar, maple syrup, non-dairy milk, melted coconut oil, vanilla extract, and apple cider vinegar until well combined.
  3. In another bowl, mix together oat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually incorporate the dry mixture into the wet ingredients until just combined. Fold in vegan chocolate chips and chopped walnuts gently.
  5. Pour the batter into the prepared loaf pan and top with additional chocolate chips and walnuts if desired. Bake for 60-65 minutes or until a toothpick comes out clean.
  6. Allow the bread to cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.
