- 3 lbs goat meat
- ½ cup green seasoning
- 4–5 tbsp curry powder
- 1 medium potato (cubed)
- 1/2 Scotch bonnet pepper
- ¼ cup onion
- ¼ cup sweet pepper
- 3 stems thyme
- 2 tbsp ginger
- ½ cup water (as needed)
- 2 tbsp adobo
- 3 tbsp complete seasoning
- 3 tbsp black pepper
- 1 tbsp jerk seasoning
- 2 tbsp onion powder
- 1 tsp cayenne pepper
- 1 tsp oregano
- 3 pegs garlic
- 6 pimento seeds
Instructions
- Wash goat meat in a mixture of vinegar, lime, and water; soak for 15 minutes.
- Season meat with green seasoning, curry powder, cayenne pepper, adobo, jerk seasoning, complete seasoning, black pepper, minced garlic, onion powder, and half of any optional spice blend.
- Marinate overnight for best flavor.
- In a hot pot, sauté crushed garlic in water until bubbling; add curry powder and pimento seeds.
- Brown the seasoned goat meat in the pot.
- Add water and vegetables including chopped onions, sweet peppers, thyme stems, ginger, and Scotch bonnet pepper.
- Cover and simmer for 2-3 hours; check every half hour to add water if needed.
- When meat is tender, add cubed potatoes.
- Adjust liquid as necessary; season again if needed.
- Cook until potatoes are soft; serve hot.
