Ingredients

  • 3 lbs goat meat
  • ½ cup green seasoning
  • 45 tbsp curry powder
  • 1 medium potato (cubed)
  • 1/2 Scotch bonnet pepper
  • ¼ cup onion
  • ¼ cup sweet pepper
  • 3 stems thyme
  • 2 tbsp ginger
  • ½ cup water (as needed)
  • 2 tbsp adobo
  • 3 tbsp complete seasoning
  • 3 tbsp black pepper
  • 1 tbsp jerk seasoning
  • 2 tbsp onion powder
  • 1 tsp cayenne pepper
  • 1 tsp oregano
  • 3 pegs garlic
  • 6 pimento seeds

Instructions

  1. Wash goat meat in a mixture of vinegar, lime, and water; soak for 15 minutes.
  2. Season meat with green seasoning, curry powder, cayenne pepper, adobo, jerk seasoning, complete seasoning, black pepper, minced garlic, onion powder, and half of any optional spice blend.
  3. Marinate overnight for best flavor.
  4. In a hot pot, sauté crushed garlic in water until bubbling; add curry powder and pimento seeds.
  5. Brown the seasoned goat meat in the pot.
  6. Add water and vegetables including chopped onions, sweet peppers, thyme stems, ginger, and Scotch bonnet pepper.
  7. Cover and simmer for 2-3 hours; check every half hour to add water if needed.
  8. When meat is tender, add cubed potatoes.
  9. Adjust liquid as necessary; season again if needed.
  10. Cook until potatoes are soft; serve hot.
