  • 500g chicken breast, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 400g canned chopped tomatoes
  • 200ml chicken stock
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • Salt & pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • 2 cups cooked white rice

Instructions

  1. Heat olive oil in a large pan over medium heat. Add the diced onion and minced garlic; sauté until soft.
  2. Add the chicken pieces to the pan. Season with salt, pepper, smoked paprika, and oregano; brown until cooked through.
  3. Stir in the diced bell peppers and cook for an additional 3 minutes.
  4. Pour in the chopped tomatoes and chicken stock; stir to combine.
  5. Allow the mixture to simmer uncovered for 15-20 minutes until thickened.
  6. Serve hot over fluffy rice and garnish with fresh parsley.
