Ingredients

Scale
  • 1 pint cherry tomatoes
  • ½ cup extra-virgin olive oil
  • ½ cup slivered almonds
  • 1 large clove garlic (peeled and smashed)
  • 1 cup packed basil leaves
  • ½ cup grated cheese alternative (such as nutritional yeast)
  • 1 teaspoon kosher salt

Instructions

  1. Preheat your oven to 400°F. Line a baking sheet with aluminum foil.
  2. Arrange the cherry tomatoes on the sheet pan, drizzle with 1 tablespoon of olive oil, and toss gently to coat.
  3. Roast tomatoes for about 20 minutes until they are soft and slightly caramelized, then set aside to cool.
  4. In a skillet over medium-low heat, toast the slivered almonds for about 5 minutes until golden brown.
  5. In a food processor, combine the toasted almonds and smashed garlic; pulse until finely ground.
  6. Add the cooled roasted tomatoes (using a slotted spoon), basil leaves, grated cheese alternative, and kosher salt to the food processor.
  7. Pulse to combine; scrape down sides as needed. With the processor running, gradually drizzle in the remaining olive oil until emulsified and smooth.
