Ingredients

  • 3 1/3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup lukewarm water
  • 3 tablespoons olive oil
  • 4 cups chopped baby spinach
  • 2 tablespoons olive oil (for filling)
  • 1 medium yellow onion
  • Salt and pepper to taste
  • 1/2 teaspoon Aleppo pepper (optional)
  • 1 cup crumbled feta cheese

Instructions

  1. In a mixing bowl, sift flour and add salt. Create a well in the center; add water and olive oil. Mix until forming a rough dough.
  2. Knead the dough on a floured countertop for 2-3 minutes until smooth. Place in an oiled bowl, cover, and let rest for 20 minutes.
  3. Prepare the filling by mixing together chopped spinach, finely chopped onion, olive oil, salt, pepper, and Aleppo pepper in another bowl. Massage the mixture gently.
  4. Incorporate crumbled feta into the filling and adjust seasoning as desired.
  5. Divide rested dough into six equal pieces; roll each into thin circles about 10½ inches in diameter.
  6. Spread filling over one half of each dough circle and fold to seal tightly.
  7. Cook in a preheated non-stick pan over medium-high heat for about 1 minute per side until golden brown.
  8. Brush with olive oil after cooking and serve warm or at room temperature.
