- 3 1/3 cups all-purpose flour
- 1 teaspoon salt
- 1 cup lukewarm water
- 3 tablespoons olive oil
- 4 cups chopped baby spinach
- 2 tablespoons olive oil (for filling)
- 1 medium yellow onion
- Salt and pepper to taste
- 1/2 teaspoon Aleppo pepper (optional)
- 1 cup crumbled feta cheese
Instructions
- In a mixing bowl, sift flour and add salt. Create a well in the center; add water and olive oil. Mix until forming a rough dough.
- Knead the dough on a floured countertop for 2-3 minutes until smooth. Place in an oiled bowl, cover, and let rest for 20 minutes.
- Prepare the filling by mixing together chopped spinach, finely chopped onion, olive oil, salt, pepper, and Aleppo pepper in another bowl. Massage the mixture gently.
- Incorporate crumbled feta into the filling and adjust seasoning as desired.
- Divide rested dough into six equal pieces; roll each into thin circles about 10½ inches in diameter.
- Spread filling over one half of each dough circle and fold to seal tightly.
- Cook in a preheated non-stick pan over medium-high heat for about 1 minute per side until golden brown.
- Brush with olive oil after cooking and serve warm or at room temperature.
